Duck Rice Papers


Sure to impress, this delicious and tasty starter is easy to prepare and looks amazing. Perfect for any social occasion or just to make something a little different. Makes 16.

1 duck – confit
1 packet snow peas
1 packet mung beans
½ small carrot – finely chopped into strips
¼ red capsicum
¼ mango
½ tsp coriander – chopped
16 rice paper sheets
salt and pepper to taste

Shred the confit duck.
Combine snow peas and mung beans with carrot, red capsicum, mango and coriander and season with salt and pepper.
Place the mixture in the middle of the rice paper, fold the ends and roll.

Thai dipping sauce
1 cup sugar
½ cup water
½ cup white vinegar
2 tbsp garlic – finely chopped
2 tbsp fish sauce
1 ½ tsp indonesian chilli sauce (sambal oelek)
2 tbsp lime juice
¼ cup carrot – shredded

Combine sugar water and vinegar in a small saucepan.
Bring to a boil and boil for 5 minutes.
Reduce heat.
Stir in garlic, fish sauce and chilli sauce. Simmer for 2 minutes.
Remove from heat.
Chill and serve with the duck rice papers.
